STAGES COLD WATER TESTS TEMPERATURES
Soft Ball Can be picked up but flattens. 234 to 240 F
Firm Ball Holds its shape until pressed 242 to 248 F
Hard Ball Holds its shape but is pliable 250 to 268 F
Soft Crack Candy separates into hard but not brittle (easy cracking) threads 270 to 290 F
Hard Crack Candy separates into hard and brittle threads 300 to 310 F
