STAGES COLD WATER TESTS TEMPERATURES
Soft Ball Can be picked up but flattens. 234° to 240° F
Firm Ball Holds its shape until pressed 242° to 248° F
Hard Ball Holds its shape but is pliable 250° to 268° F
Soft Crack Candy separates into hard but not brittle (easy cracking) threads 270° to 290° F
Hard Crack Candy separates into hard and brittle threads 300° to 310° F
